Egg White Omelette with Avocado, Goat Cheese and Microgreens

This simple breakfast will help make getting out of your cozy bed a little bit easier.


  • 2 egg whites

  • 2 tsp milk

  • extra virgin olive oil, or cooking spray

  • salt and pepper, to taste

  • 1/2 avocado, sliced

  • 1/4 cup goat cheese, crumbled

  • 1/2 cup microgreens (such as broccoli, radish, sunflower)


  1. Warm pan over medium-low heat.

  2. Whisk together two egg whites and 2 tsp of milk.

  3. Lightly coat pan with olive oil or cooking spray.

  4. Add egg mixture to pan and cook over medium-low heat.

  5. Season mixture while cooking.

  6. Flip the egg over when bottom looks cooked.

  7. Once the other side is done, transfer it to a plate, fill it with sliced avocado, crumbled goat cheese, and some fresh microgreens, then fold it in half.

  8. Serve and enjoy!
