This simple breakfast will help make getting out of your cozy bed a little bit easier.
2 egg whites
2 tsp milk
extra virgin olive oil, or cooking spray
salt and pepper, to taste
1/2 avocado, sliced
1/4 cup goat cheese, crumbled
1/2 cup microgreens (such as broccoli, radish, sunflower)
Warm pan over medium-low heat.
Whisk together two egg whites and 2 tsp of milk.
Lightly coat pan with olive oil or cooking spray.
Add egg mixture to pan and cook over medium-low heat.
Season mixture while cooking.
Flip the egg over when bottom looks cooked.
Once the other side is done, transfer it to a plate, fill it with sliced avocado, crumbled goat cheese, and some fresh microgreens, then fold it in half.
Serve and enjoy!
